Course Description

Knowledge is power - and that applies to the grill, too. Learn grilling and smoking techniques and take your grilling to the next level. Learn how fire and smoke flavors food, and the kind of heat that is right for fish, vegetables and meat. Discover additional seasoning techniques and how to maximize your grill's capabilities. Get more flavors from your grilled foods and more compliments for the chef. Bring a tool kit with the following: paring knife; chef knife; peeler; spatula; thermometer; and measuring spoons. Prerequisite: CES 2187 Cooking 101: Skill Development or with instructor's approval.
